Cinnamon Buns Recipe
• 1 cup warm milk
• 2 1/4 teaspoons active dry yeast
• 1/2 cup granulated sugar
• 1/3 cup unsalted butter, melted
• 2 large eggs
• 4 1/2 cups all-purpose flour
• 1 teaspoon salt
• 1/2 cup brown sugar
• 3 tablespoons ground cinnamon
• 1/3 cup unsalted butter, softened
• 1/2 cup raisins (optional)
For the cream cheese icing, you will need:
• 1/2 cup unsalted butter, softened
• 4 oz cream cheese, softened
• 2 cups powdered sugar
• 1 teaspoon vanilla extract
• 1/4 teaspoon salt

Instructions:
• In a large bowl, combine the warm milk, yeast, and granulated sugar. Let sit for 5 minutes until the mixture becomes frothy.
• Add in the melted butter and eggs, and whisk until well combined.
• In a separate bowl, mix together the flour and salt. Add this mixture to the wet ingredients, stirring until a dough forms.
• Turn the dough out onto a floured surface and knead for 5-10 minutes until the dough becomes smooth and elastic.
• Place the dough in a greased bowl and cover with a towel. Let the dough rise in a warm place for about an hour, or until it has doubled in size.
• While the dough is rising, make the filling by mixing together the brown sugar, cinnamon, and softened butter.
• After the dough has risen, punch it down and roll it out into a large rectangle.
• Spread the filling evenly over the dough, leaving a small border around the edges. Sprinkle raisins on top of the filling (if using).
• Starting from the long edge of the rectangle, roll the dough tightly into a log. Pinch the edges to seal.
• Cut the log into 12-15 even slices and place them in a greased baking dish.
• Let the cinnamon buns rise for another 30 minutes.
• Preheat the oven to 375°F and bake the cinnamon buns for 25-30 minutes, or until they are golden brown.
• While the cinnamon buns are baking, make the cream cheese icing by creaming together the butter and cream cheese until light and fluffy. Add in the powdered sugar, vanilla extract, and salt, and mix until well combined.
• Once the cinnamon buns are done baking, let them cool for a few minutes before spreading the cream cheese icing on top.
