Chicken Katsu Loaded Fries

Ingredients:

  • 2 chicken breasts
  • Salt & pepper
  • 1 tsp curry powder
  • 1 egg
  • 36g panko breadcrumbs
  • Low calorie spray
  • 2 potatoes
  • 46g S&B Golden Curry Japanese curry mix (half pack), mixed with boiling water

Optional: sliced red chili and fresh coriander


Instructions:

  1. Tenderize chicken breasts and season with salt, pepper, and curry powder.
  2. Dip chicken in whisked egg, then coat with panko breadcrumbs.
  3. Slice potatoes into fries, season with salt and pepper, and spray with low-calorie spray.
  4. Air fry chicken and fries at 190°C for 10 minutes.
  5. Flip chicken, spray again, and shake fries. Air fry for another 7 minutes or until chicken is cooked.
  6. Let chicken rest, then slice. Place on top of fries, along with curry sauce and optional coriander and red chili slices.
