Chicken Katsu Loaded Fries
Ingredients:
- 2 chicken breasts
- Salt & pepper
- 1 tsp curry powder
- 1 egg
- 36g panko breadcrumbs
- Low calorie spray
- 2 potatoes
- 46g S&B Golden Curry Japanese curry mix (half pack), mixed with boiling water
Optional: sliced red chili and fresh coriander
Instructions:
- Tenderize chicken breasts and season with salt, pepper, and curry powder.
- Dip chicken in whisked egg, then coat with panko breadcrumbs.
- Slice potatoes into fries, season with salt and pepper, and spray with low-calorie spray.
- Air fry chicken and fries at 190°C for 10 minutes.
- Flip chicken, spray again, and shake fries. Air fry for another 7 minutes or until chicken is cooked.
- Let chicken rest, then slice. Place on top of fries, along with curry sauce and optional coriander and red chili slices.
