Ultimate 30-Minute Sweet 'n Sour Chicken

🛒 Ingredients
- 500g boneless chicken breast (1 large breast), cut into 2cm cubes
- 1½ tsp smoked paprika
- 1 tsp garlic powder
- 1 tsp ginger powder
- ¾ tsp sea salt
- 3 tbsp cornstarch (divided use)
- 2 tbsp peanut oil
- 1 medium onion (150g), 2cm dice
- 1 red bell pepper (200g), 2cm dice
- 3 garlic cloves, minced
Sweet & Sour Sauce:
- ¼ cup tomato ketchup
- 2 tbsp rice vinegar
- 1 tbsp light soy sauce
- 1 tbsp brown sugar
- ½ cup pineapple juice
- 1 tsp cornstarch slurry (1:1 cornstarch:water)

Prep the Chicken
In a bowl, combine chicken cubes with paprika, garlic powder, ginger powder, salt, and 2 tbsp cornstarch. Toss until evenly coated.

Cook the Chicken
Heat oil in wok over medium-high. Cook chicken in batches until golden brown (3-4 mins per side). Transfer to paper towels.

Make the Sauce
Whisk together all sauce ingredients except cornstarch slurry. Set aside.

Stir-Fry Veggies
In same wok, sauté onion and bell pepper 2 mins. Add garlic and cook 30 secs until fragrant.

Combine & Serve
Return chicken to wok, add sauce mixture. Bring to simmer. Stir in cornstarch slurry and cook until thickened (1-2 mins).
