Reshmi Chicken Curry Recipe

Ingredients:
For the Marination:
• 250 gm chicken
• 1 tsp ginger garlic paste
• 1 tsp lime juice
• 3-4 green chilli
• 1 tsp red chilli powder
• 1/2 cup curd
• 2 tbsp fresh cream
• Salt to taste
For the Gravy:
• 2 onions, chopped
• 2 tsp Oil
• 10 cashews
• 2-3 green chillies
• 1 tsp kasoori methi
• 1/2 tsp garam masala powder
• 2 tbsp fresh cream
• Coal (for smoky flavor, optional)
• Ghee - 2 tsp
Method:
• Marinate the chicken with the ingredients listed and let it sit for 30 minutes.
• Saute chopped onions until golden brown, then grind them with cashews into a fine paste.
• Heat oil in a pan, add bay leaves and the onion-cashew paste. Saute for 5 minutes.
• Add the marinated chicken, saute for 10 minutes, cover, and cook.
• Add kasoori methi and garam masala powder. Mix well and cook for an additional 10 minutes.
• Turn off the flame, add fresh cream, and mix well.
• For a smoky flavor, place hot coal in a small bowl, add a few drops of oil or ghee, and cover with a lid for 5 minutes.
• Garnish with coriander leaves and serve hot.
