Peanut Butter Cup Cookie Bars

These bars boast a perfect blend of crispy edges and gooey interiors, making them irresistibly addictive! Whether you opt for classic peanut butter cups or sunflower cups, the result is equally divine.

Ingredients:

  • 2 1/3 cups gluten-free flour

  • 1 tsp baking soda

  • 1 tbsp arrowroot powder

  • 2 eggs

  • 1 1/4 cup brown sugar

  • 1/2 cup sugar

  • 3/4 cup butter, softened

  • 1 1/2 tbsp vanilla extract

  • 1/2 tsp salt

  • 2 cups dark chocolate sunflower butter cups or traditional peanut butter cups, roughly chopped

  • 1 tsp flaky sea salt

Instructions:

  1. Preheat your oven to 350°F (175°C). Grease a 9” round or 9x9 square baking pan with nonstick spray.

  2. In a mixing bowl, combine the sugars and softened butter, beating on high for 3 minutes until light and fluffy.

  3. Mix in the eggs and vanilla until well combined.

  4. Gradually add the baking soda, arrowroot powder, flour, and salt to the wet mixture, stirring until just incorporated.

  5. Gently fold in the chopped peanut butter cups until evenly distributed throughout the batter.

  6. Pour the batter into the prepared baking dish, spreading it out evenly.

  7. Bake for 30-35 minutes, or until a toothpick inserted into the center comes out mostly clean and the top is golden brown.

  8. Allow the bars to cool completely in the pan before cutting into them.

  9. Once cooled, sprinkle flaky sea salt over the top for an extra burst of flavor.
